Cranberry Relish

bullet1 orange, unpeeled, seeded, and cut into fourths
bullet5-6 apples, unpeeled, seeded, and cut into fourths
bullet1 (1 pound) bag cranberries
bullet1 (20 ounce) can crushed pineapple, drained
bullet½ cup chopped nuts

Place all in cuisinart and grate thoroughly. If processor isn’t large enough for all of is, just do the oranges, apples, and cranberries; then put into a large bowl and stir in the pineapple and nuts. Refrigerate overnight. Yields 2 quarts.

NOTE: Aysha made this in Girl Scouts once and it is wonderful. It DOES make a lot so its nice to give away in half pint jars for the holiday. It won’t keep too long, so you can’t just let it sit around the refrigerator. I’d forgotten about it, but at Thanksgiving in Atlanta this year, Aysha’s mother-in-law made some as follows:

bullet1 (1 pound) bag cranberries
bullet2 large oranges, quartered, seeded, and unpeeled
bullet2 cups sugar

As with mine, just throw it all into the cuisinart and have at it! Both are very good and very refreshing with a holiday dinner!
