Cranberry Salad

bullet1 (14 ounce) can Eagle Bran Milk
bullet¼ cup lemon or lime juice
bullet1 (20 ounce) can crushed pineapple, drained
bullet1 (16 ounce) can whole-berry cranberry sauce
bullet2 cups miniature marshmallows
bullet½ cup chopped nuts
bullet1 (8 ounce) carton thawed Cool Whip
bulletOptional: red food coloring

In a bowl, combine milk and lemon or like juice; mix well.

Stir in pineapple, cranberry sauce, marshmallows, nuts, and food coloring if desired. Fold in whipped topping.

Spoon the mixture into either an 8 x 12 or a 9 x 13 pan and freeze until firm.

NOTE: I found this in a magazine in Nov. 2005 but do not remember which, and it’s not written on the page. The recipe called for pecans and lemon juice, but I had neither, so I used lime juice and walnuts. I did not put in the red food coloring and was disappointed in how bland it looked. The taste was fine; it just wasn’t pretty like in the picture. So next time I will definitely use the food coloring.
