Cream Cheese and Dried Cranberry Spread

4 ounces cream cheese, softened (I use light)

bullet

2 tablespoons chopped dried cranberries

bullet

2 tablespoons slivered almonds, toasted and chopped

1-teaspoon honey

bullet

1-teaspoon fresh lemon juice

bullet

1 drop almond extract

bullet

Pinch of salt

Put all in small bowl and mix with hand mixer. Spread onto toasted bagels.

NOTE: I got this in the February 2002 Gourmet magazine. It calls for dried sour cherries, but the only ones I could find at Publix were "sweetened green cherries", so I just used the dried cranberries (craisins) I had in my pantry. Publix was out of sun dried tomato bagels, which we really like, so I just bought two of the wheat ones and they were great!

The "cook’s notes" in Gourmet said this can be chilled, covered, up to one week. However, after three days it will begin to take on the color of the cherries.
