Creamy Two-Cheese Potato Gratin
Preheat oven to 350. Place the potato slices and garlic slices in a saucepan, cover with water, and boil for 8 minutes. Drain. Make cheddar cheese sauce by melting 2 tablespoons butter in a skillet. Add 2 tablespoons of flour, and then thin slowly with 1 ¼ cups milk. Stir in 1 cup grated cheddar cheese. Arrange half the potatoes and garlic in small casserole dish and top with sauce. Repeat layer and top with sauce. Sprinkle top with parmesan cheese and paprika. Bake for 25 minutes. NOTE: I got this, also, from Cooking.Com and it is also from Cooking Light. I made half the recipe for the two of us, altho the salt and cayenne pepper is what it called for with 2 pounds of potatoes. This has a really good and spicy flavor and we thoroughly enjoyed it. I made it a day ahead and just refrigerated it until I was ready to bake it. I served it with the Honey-Pecan Crusted Chicken, so they just baked together.
