Cucumber and Tomato Salad

2 cucumbers (I peeled)

1 large tomato

1 small green bell pepper

1 small onion (I omitted)

1/3 cup vegetable oil

3 tablespoons sugar

bullet

3 tablespoons red wine vinegar

bullet

¾ teaspoons salt

bullet

1/8 teaspoon pepper

Cut cucumbers, tomato, pepper, and onion into chunks and set aside.

Whisk together oil and next four ingredients until sugar is dissolved. Pour over vegetables and refrigerate until cold, about three hours.

NOTE: I found this in June 2001 Southern Living. It said to cut the cucumbers and tomato in half and remove the seeds, but I did NOT. I also put the dressing in a jar and just shook it up well. Easy recipe and very good and refreshing taste!
