Curried Lentil Soup

1/2 tablespoon canola oil

1/2 cup onion, chopped

1 clove garlic, crushed

bullet

1 tablespoon curry powder

bullet

1 (14.5 oz) can fat-free chicken broth

bullet

1 1/4 cups water

bullet

1 cup canned tomatoes, chopped

1 cup lentils, uncooked

bullet

1/2 cup finely chopped carrots (I omitted)

bullet

1/4 cup red wine (optional)

bullet

1/2 cup parsley, chopped

bullet

salt and pepper to taste

In a large saucepan, heat oil; sauté onion and garlic until soft. Stir in curry powder and sauté one minute. Add broth, water, tomatoes, lentils, carrots, and optional wine. Simmer, covered until lentils are cooked: about 45 minutes. Stir in parsley; simmer 5 minutes more. Serve with sourdough bread.
