Curry-Coconut Chicken with Honey Mustard Sauce

1/4 cup milk

1 egg

1 cup shredded coconut

bullet

1 teaspoon curry powder

bullet

2 skinless boneless chicken breasts

bullet

1/4 cup honey

bullet

1/4 cup Dijon mustard

Heat oven to 350 and spray casserole dish with Pam.

Mix milk and egg in shallow bowl.

Mix coconut and curry powder in another bowl.

Dip chicken into egg wash, then coat with coconut mixture. Place in prepared pan.

Bake 15 minutes, turn over and sprinkle with more coconut, and bake another 15 minutes.

Mix honey and mustard and serve sauce over cooked chicken.
