Fried Mashed Potatoes

Cold left over mashed potatoes

1 egg

Flour

Crisco (yuck, substitute unsat. oil)

 

Beat egg and stir into cold potatoes. Stir together until well blended. Using a large spoon, scoop up potatoes into your hand. Flour each potato ball, then place gently into the hot Crisco. When golden brown on the bottom, flip gently over onto other side. When golden brown on both sides, remove from grease onto paper towel to drain. Salt lightly and serve.

NOTE: My mother used to fix these with left over mashed potatoes. They are messy to fix, but they are very good! I usually just held them in my hand and sprinkled flour over them on all sides. They sometimes fell apart if I tried to ‘dip’ them into the flour. Also, once in the hot grease, they have a tendency to spread out some, so don’t place them too close together. They are also good with ketchup!
