Fried Rice

1 cup cold cooked rice

2 slices bacon, cut up

1 small onion, cut up

2 egg omlet

bullet

chopped ham

soy sauce

Brown bacon and onion in large skillet, then remove. Fix egg either on top of stove or in microwave and cup up into pieces. Chop ham into pieces. Combine all.

Place rice in skillet after removing bacon and onion and season to taste with soy sauce. When warm, add bacon, onion, egg and ham. Heat and stir until warm. Serve as side dish or main course with salad.

NOTE: Daddy learned to make this during WWII in Honolulu. It was one of our favorite things and always a treat. You can make it with any amount of rice that is left over, but this is how he did it when cooking it as a main meal. It is best when the rice is cold, so if doing it the same day, cook the rice earlier in the day.
