Jell-O Salad

1 (3 ounce) package Jell-O

1 cup boiling water

bullet

½ pint whipping cream

bullet

1 (3 ounce) package cream cheese

1 large can crushed pineapple

bullet

2 cups miniature marshmallows

bullet

½ cup chopped pecans

bullet

Cherries or strawberries

 

 

Dissolve gelatin in water; chill until thickened.

Beat whipping cream stiff. Beat cream cheese smooth and add to whipping cream. Beat together.

Fold thickened gelatin into above mixture. Fold in fruit, marshmallows, and pecans. Put in pan of choice and Chill until thickened.

 

NOTE: My mother used to make this for me when I was a little girl. It was one of my children’s favorites. I always used strawberry-banana Jell-O or raspberry Jell-O. I also would cut up close to a pint of fresh strawberries. I used to put it in a medium sized Tupperware jello mold and put the excess in the individual Tupperware molds and the kids ate them as a snack after school.
