Frozen Lemonade Squares

bullet1 ¼ cups graham cracker crumbs
bullet1/3 cup melted butter
bullet1 quart frozen vanilla yogurt, softened
bullet1 (6 ounce) can lemonade concentrate, thawed
bulletOptional: ½ cup thawed Cool Whip; mint springs, lemon slices or zest

Mix crumbs and butter. Press firmly onto the bottom of a 9" square pan.

Beat yogurt and lemonade concentrate in large bowl with electric mixer on medium speed until well blended. Spread over crust.

Freeze four hours or until firm. Cut into squares. Serve each square topped with a dollop of Cool Whip, mint springs, and lemon slices or zest.

NOTE: This is from the Kraft food site (www.kraftfoods.com) and was easy, quick, and tastes really refreshing. I used two pints of Haagen-Dazs Frozen Vanilla Yogurt and Minute Maid lemonade concentrate. I was just fixing it for us, so I didn’t get any cool whip or mint sprigs, but I did grate lemon zest over the top of it for added color and texture.
