Fruitcake Cookies (edible)

11 ounces pitted dates

1 (8 ounce) carton of candied pineapple

1 (8 ounce) carton of red cherries

4 cups pecans, cut up

1-cup flour

bullet

1-teaspoon baking powder

bullet

¼ teaspoon salt

bullet

½ cup sugar

bullet

2 eggs

bullet

3 tablespoons brandy

 

Cut up all fruit. Cover with 3 tablespoons of brandy and let it soak. Chop the nuts.

Sift the flour over the fruit and stir. Add the nuts.

Take the eggs, sugar, salt, and baking powder and mix together. Pour it all over the fruit.

Scoop by large spoonfuls into small muffin tins and bake at 250 for 30 minutes.

This will make 5 dozen.

NOTE: I got this recipe from my aunt. She makes these every year and gives them as gifts. They do NOT taste like the ‘traditional’ fruitcake, but if you don’t care for fruitcake, you probably won’t like these. They are addictive, however, if you like this sort of thing; and they make a wonderful gift for someone who is so inclined. This is half of her recipe, but 5-dozen is plenty! And its nothing I’ll fix here, as the person for whom I enjoy cooking does NOT like this sort of thing!
