Gourmet Potatoes

3 medium potatoes

2 tablespoons melted butter

1 tablespoon softened butter

¾ cup grated cheddar + ½ cup more

2 green onions, chopped

bullet

½ teaspoon salt

bullet

Dash freshly ground pepper

bullet

1 cup of sour cream

 

Cover the potatoes with salted water and boil until done, about half an hour. Drain and cool. Peel and coarsely shred potatoes; set aside.

Melt butter and cheese together over low heat. Combine the potatoes, cheese mixture, sour cream, onions, salt, and pepper in a bowl. Stir well. Spoon the mixture into a one-quart casserole. Dot with one tablespoon softened butter and remaining grated cheese. (I sprinkled lightly with paprika). Bake, covered, for half an hour on 300 degrees.

NOTE: I got this out of the Junior League Celebration Cookbook. It was easy to do and I made it a day ahead and then just baked it the following day. It was more than enough for the two of us and we will get another meal out of it. It went very well with the limeade chicken but would also go with any sort of meat, poultry, or BBQ.
