Greek Salad

3 large tomatoes, cut into wedges

1 cucumber, thinly sliced

1 medium green pepper, cut into 1" pieces

1 small onion, thinly sliced

8 pitted ripe olives

bullet

1/4 cup + 1` tablespoon olive oil

1/4 cup red wine vinegar

bullet

1/2 teaspoon dried whole oregano

1/2 teaspoon salt

bullet

1/4 teaspoon pepper

bullet

2/3 cup crumbled feta cheese

 

Combine tomatoes, cucumber, green pepper, onion, and olives in a large bowl; set aside.

Combine remaining ingredients except cheese in a jar. Cover tightly and shake. Pour over vegetables; toss. Chill several hours.

To serve, toss and sprinkle with cheese.

NOTE: In Greece this was served with a block of feta cheese on top of the salad.
