Green Beans with Bacon
Cook beans in boiling water to desired tenderness. Drain and set aside. Cook bacon til crisp. Drain on paper towel, reserving 1 TBSP bacon grease. Wipe out pan. Return bacon grease to pan. Sauté green onions for one minute, then add cooked green beans, salt, and pepper. Sauté 2-3 minutes or until heated through. Place in serving bowl and top with bacon. NOTE: This is in the May or June 2005 issue of Southern Living under "quick and easy." It was, and it was delicious! I served it with Shrimp Creole over yellow rice and a fruit salad. This was half the given recipe and was plenty for us. |
