Grilled Steaks with Gorgonzola-Walnut Butter

½ cup + 2 tablespoons crumbled gorgonzola cheese

2 tablespoons butter, room temperature

1 tablespoon chopped fresh Italian parsley

bullet

¼ teaspoon+ 1/8 teaspoon dried rosemary, finely crumbled

½ tablespoon dried rosemary, finely crumbled

2 tablespoons chopped walnuts

3 large garlic cloves, peeled

¾ teaspoon EACH salt and pepper

 

Combine cheese, butter, parsley, and 1/4+ 1/8 teaspoons rosemary in medium bowl. Stir to blend. Mix in walnuts. Season to taste with salt and pepper. Transfer to small bowl. (Can do this two days ahead. Cover and refrigerate. Bring to room temperature before using.)

Combine ½ tablespoon rosemary, garlic, salt and pepper in processor. Blend until mixture resembles coarse paste.

Pat steaks dry. Place on dish and rub garlic paste on each side of steak. Cover and let stand for one hour at room temperature.

Grill steaks to desired doneness. Top with generous portion of gorgonzola-walnut butter and serve!

NOTE: I copied this recipe years ago. At the bottom of the page it says "July 1996". I THINK it is from Southern Living, but actually I have no idea! This is half the recipe given and I had MORE than enough of the cheese/butter mixture. I used two six ounce sirloins from Omaha Steaks when I did this for us.
