Ham and Gouda Grilled Sandwich

1 tablespoon extra-virgin olive oil

1 onion, thinly sliced

4 slices bread

4 ounces smoked ham

3 ounces thinly sliced Gouda cheese

bullet

Handful spinach

Heat the oil in skillet over medium heat. Add onion and sauté 5 minutes. Reduce heat to low; cover and cook until onion is very tender and golden, stirring frequently, 10-25 minutes.

Divide ham, cheese, caramelized onions, and spinach between the two sandwiches. Butter bread and grill until golden.

NOTE: This is in the March 2005 Bon Appetit. The recipe called for white or sourdough bread, but I used Arnold 12 Grain Bread. It did not call for any dressing on the sandwich, but I put honey mustard on the bread before assembling the sandwich. It also called for "frisee", which is obviously a green of some sort. I am unfamiliar with it but my daughter suggested spinach, as it is good wilted. Hence using the spinach in the sandwich. It also called for a large onion and to sauté, covered, for 25 minutes. I had a small onion and didn’t need to do it that long, hence my range of time in the above recipe. The second time I fixed this recipe, I used smoked ham and spicy mustard and I used my microplane to grate the cheese rather than just slice it. We both really liked it much better that way, but it is good either way!
