Harvest Salad with Cider Vinaigrette

2 red pears, chopped

1 tablespoon lemon juice

3/4 cup dried apricots, cut into thin strips

3/4 cups dried figs, cut into thin strips

1/2 cup raisins

bullet

Cider Vinaigrette

bullet

1 (6 ounce) package spinach

bullet

1/2 cup coarsely chopped walnuts or pecans, toasted

1 (4 ounce) package crumbled gorgonzola or blue cheese

 

Toss together chopped pear and lemon juice in medium bowl. Add apricots, figs, and raisins, tossing well. Refrigerate one hour or overnight.

Toss spinach with vinaigrette. Top with dried fruit, walnuts, and cheese.

Cider Vinaigrette:

3 tablespoons cider vinegar

1 garlic clove, minced

1 teaspoon dijon mustard

1/2 teaspoon sugar

1/3 cup olive oil

Whisk together first four ingredients; gradually whisk in oil until blended.

NOTE: Recipe is from Southern Living. It called for one small purple onion and also one cup diced jicama, both of which I eliminated. I don't know what jicama is and I couldn't find any in Publix, so I just eliminated it. It also called for golden raisins, but I already had the dark ones and used them. We really liked all the flavors and it’s a really pretty salad!!
