Hot Brown Sandwich

2 slices bread, toasted

1/3 lb. sliced turkey

3 tablespoons flour

3 tablespoons butter

1 cup milk

bullet

1/2 cup grated cheddar cheese

bullet

1/4 teaspoon salt

bullet

1/8 (dash) teaspoon cayenne pepper

4 slices bacon, cut up, browned, and drained

Parmesan cheese

Slice, brown, drain bacon and set aside.

Toast bread and spread with dijon mustard and top with sliced tomato.

Melt butter in skillet. Add flour. Mix well and add milk. Stir until thickened and add cheese and spices.

Place bread on cookie sheet. Put turkey on top of tomatoes, top with sauce and sprinkle with parmesan cheese and a little more cayenne pepper. Put under broiler until cheese melts. Top with chopped bacon and serve.

NOTE: Found this in the May 2000 Southern Living for appetizers. I changed it a bit by toasting our bread and spreading it with Dijon mustard and topping that with tomatoes which I salted and peppered. I put the turkey on that (I always buy 1/3 lb. turkey meat for us to split between two sandwiches), covered it with the sauce and parmesan and broiled it. I put the bacon on it after I removed it from the oven. I only used one slice of bread per sandwich just to cut down on the bread we consumed!
