Italian Chopped Salad with Sherry-Shallot Vinaigrette

3 plum tomatoes, diced |

1 small head belgian endive, chopped |
|
4 oz fresh mozzarella balls in water, drained, cut into 1/2" pieces |

1 cup chopped arugula |
|
1/2 cup chopped radicchio |
|
Sherry-Shallot vinaigrette( see following recipe) |
Combine all ingredients except vinaigrette in large bowl. Toss with enough vinaigrette to coat. Season with salt and pepper.
Vinaigrette:

2 tablespoons sherry wine vinegar |
|
1 tablespoon minced shallots |
|
1 tablespoon dijon mustard |
|
1/4 cup olive oil |
Whisk vinegar, shallots, and mustard in small bowl. Gradually whisk in oil. Season to taste with salt and pepper.
NOTE: I halved the salad recipe for this which I have printed. And I just bought bag salad with radicchio in it. I couldn't find sherry wine vinegar today (and I was fixing it tonight), so I just used red wine vinegar. We liked the whole thing!
