Jane Echols

Ft. Myers, Florida

Key Lime Margarita Pie

bullet1 ¼ cups crushed pretzels
bullet¼ cup sugar
bullet6 TBSP melted butter
bullet1 (14 ounce) can Eagle Bran sweetened condensed milk
bullet½ cup lime juice
bullet1 envelope Lemon Lime Unsweetened Kool-Aid
bullet1 (8 ounce) tub Cool Whip

Mix the crushed pretzels, sugar, and butter. Press firmly onto the bottom and up the side of a 9" pie plate. Refrigerate until ready to fill.

Combine the condensed milk, lime juice, and Kool- Aid in a large bowl until well blended. Remove ½ cup Cool Whip from container and set aside for garnish. Gently stir the remaining cool whip into the bowl. Pour into crust.

Put pie in freezer and freeze six hours. Let stand at room temperature 15 minutes or until pie can be cut easily. Garnish with reserved Cool Whip.

NOTE: I got this off the Kraft Web Site. It was very easy to make and it is easy to have all the ingredients on hand. The hardest part was finding the Lemon-Lime Kool-Aid, but (in Ft. Myers) I finally found it at Sweet Bay. Neither Publix, Albertsons, nor Target carried that flavor, and they have closed all the Winn-Dixies. I did use a silicone coated whisk to mix it all together, as it was easier that way to scrape it smoothly off the sides of the bowl and keep it blended.
