Lemon Rice Pilaf

2 tablespoons unsalted butter

3 celery ribs, sliced

6 green onions, chopped

bullet

3 cups hot cooked rice (1 cup raw)

2 tablespoons grated lemon rind

bullet

½ teaspoon salt

bullet

¼ teaspoon pepper

Melt butter in a large skillet over medium heat; add celery and green onions and sauté until celery is tender, about 3-5 minutes. Stir in rice and remaining ingredients. Cook over low heat about two minutes or until thoroughly heated.

NOTE: This is in the February 2001 Southern Living. Because we like it, I used brown Basmati rice in the recipe.
