Macadamia Lemon Bars

Crust:

1 cup all-purpose flour

¼ confectioners’ sugar

½ cup butter, melted

bullet

¼ cup chopped macadamia nuts

Filling:

1 cup sugar

bullet

2 tablespoons all purpose flour

bullet

½ teaspoon baking powder

bullet

¼ teaspoon salt

bullet

2 eggs

bullet

2 tablespoons lemon juice

bullet

2 teaspoons lemon peel

bullet

2 tablespoons chopped nuts

Confectioners’ sugar

In a bowl, combine the flour, confectioners’ sugar, and butter; stir in nuts. Press onto the bottom and ½ inch up the sides of a greased 8-inch square baking dish. Bake at 350 for 15-20 minutes or until lightly browned.

In a small mixing bowl, combine the sugar, flour, baking powder, and salt. Beat in the eggs, lemon juice, and lemon peel until light and fluffy. Pour over hot crust. Sprinkle with nuts. Bake for 10-15 minutes or until lightly browned. Cool completely on a wire rack. Cut into bars and sprinkle with confectioners’ sugar.

NOTE: This is from the April/May 2004 edition of Taste of Home. I sifted both the flour and confectioners’ sugar, altho it did not say to do so. I also set my timer for 15 minutes for the crust but ended up cooking it 20 minutes. And for the filling, it was still "liquid" after 10 minutes, so I baked it another 5 minutes and checked it and it was done. I think next time I’ll cook it another 2-3 minutes, tho. After I took it out and cooled it, I sifted confectioners’ sugar over it.
