Marinated Tomatoes

3 large tomatoes

1/3-cup olive oil

bullet

¼ cup red wine vinegar

bullet

1 clove garlic, crushed

bullet

1 tablespoon chopped fresh basil

2 tablespoons chopped onion

bullet

½ teaspoon salt

bullet

¼ teaspoon pepper

Cut tomatoes into ½" slices and arrange in a shallow dish.

Combine the rest of the ingredients in a covered jar and shake to mix well. Pour over the tomatoes. Marinate, covered, in the refrigerator, for several hours or overnight.

NOTE: This is in the Junior League cookbook from Ft. Myers in 1995. I made it with the red wine vinegar, but next time I’m going to use balsamic just for a change. It was nice and refreshing. I marinated mine over night, then sat it out so the olive oil would liquefy.
