Mashed Potatoes with Spinach and Gruyere cheese
Saute spinach in two tablespoons olive oil or steam; set aside. Cook potatoes in boiling salted water until very tender, about 30 minutes. Drain well. Return to pot and mash until almost smooth. Set pot over low heat. Add butter and stir until melted. Gradually add milk, mashing until smooth. Add cheese and reserved spinach and stir until cheese melts. Thin with more milk if desired. Season to taste with salt and pepper. NOTE: This is in February 2001 Bon Appetit and this is half the given recipe (which says it serves six). This was enough for two meals for us, easily. |
