Mini Turkey Sandwiches

bullet1 (14 ounce) package King Hawaiian rolls (use "buttery")
bullet3 oz. package cream cheese, softened
bullet¼ cup mayonnaise
bullet¼ cup sour cream
bullet2 TBSP Major Grey’s chutney
bullet½ teaspoon curry powder
bullet½ teaspoon ground red pepper
bullet½ lb. sliced turkey
bullet1 cup whole berry cranberry sauce
bullet¼ cup grated onion

Remove rolls from tray and slice in half horizontally, using a serrated knife. Return bottoms half of rolls to tray.

Combine cream cheese, mayonnaise, and sour cream. Beat at low speed with an electric mixer until smooth. Sir in chutney, curry powder, and red pepper. Spread chutney mixture on cut sides of bottom halves of rolls. Set aside.

Combine cranberry sauce and onion, stir well. Spread cranberry mixture over top halves of rolls. Place turkey on top of cranberry mixture and cover with other halves of the rolls.

Yield: 1 dozen

NOTE: I got this recipe from my daughter. She found it in a Southern Living Appetizer cookbook (in 2006) I received and sent her. The original recipe called for placing the cream cheese layer on the top of the roll, the turkey on the bottom of the roll, the cranberry sauce on the top of the turkey. THEN to cover with foil and bake at 350 for 20-30 minutes. We did not do this. We put the turkey BETWEEN the two layers of flavors and ate them at room temperature. And I ate one straight out of the refrigerator the next day and it was wonderful. Probably, if you are going to heat them, the two flavors should be on top of each other so they will meld together. These and chips were a small lunch on Christmas day for the family. We made the two "sauces" a couple of days ahead and just refrigerated them. Then we brined the turkey, it was fried that morning, and we assembled the sandwiches. You could easily do it with deli turkey or get one of those cooked chickens, even, at the grocery store. The flavors are simply amazing!!!!!

It has a nice "bite" to it and would also be great for left over turkey.
