Miniature Cheesecakes
| 2 (8 oz) packages light cream cheese |
| 3/4 cup sugar |
| 2 eggs |
| 1 tablespoon lemon juice |
| 1 teaspoon vanilla |
| 18 vanilla wafers |
| I can cherry pie filling or whatever you choose |
Line muffin tins with paper cupcake liners. Place one vanilla wafer in bottom of each liner.
Combine all ingredients except for pie filling. Mix well. Spoon mixture into cupcake liners.
Bake 350 for 20 minutes. Cool completely. Remove liner, put on plate, and top with cherry pie filling. Put into refrigerator until cold.
