Mint-Chocolate Chip Ice Cream Squares

 

bullet30 Oreo cookies (small package has 36), crushed
bullet1/4-cup butter, melted
bullet1/2-gallon mint-chocolate chip ice cream, softened slightly
bullet1 (5 ounce) can evaporated milk
bullet1/2-cup sugar
bullet1 1/2 (1 ounce) squares unsweetened chocolate
bullet1 (12 ounce) carton Light Cool Whip
bullet1 cup crushed pecans

 

Crush cookies in cuisinart; Put in bowl with 1/4 cup melted butter and stir until coated. Press into lightly greased 13 x 9 pan. Freeze.

Spread softened ice cream over crust; freeze until firm.

Combine evaporated milk and next three ingredients in a small heavy saucepan. Bring to a boil over low heat, stirring constantly with a wire whisk. Cook, stirring constantly, about 4 minutes, or until mixture thickens. Cool to room temperature.

Spread chocolate mixture over ice cream. Top with cool whip and sprinkle with pecans. Freeze until firm.

NOTE: Got this recipe from a friend in Eustis. I used Publix Premium mint chocolate chip ice cream, altho Edys also makes it. Also used light cool whip and did not use the full cup of crushed pecans. The recipe says it can be cut in half and done in a 9 x 9 pan.
