Mixed Fruit Salad with Sour Cream Sauce

1/3 cup granulated sugar

1-cup water

6 fresh mint leaves

1 (8 ounce) can pineapple chunks, in juice, drained

1 banana, sliced

bullet

1 Granny Smith apple, chopped

bullet

1-cup seedless green grapes

bullet

1 cup sliced strawberries Sour Cream Sauce

Bring first 3 ingredients to a boil in a saucepan and cook, stirring constantly, 5 minutes or until sugar mixture reaches a syrup consistency. Discard mint leaves and cool syrup completely.

Combine pineapple, banana, apple, grapes, and strawberries in a large bowl. Pour syrup over fruit mixture; toss gently. Cover and chill at least one hour. Serve with Sour Cream Sauce.

Sour Cream Sauce

1/3-cup butter, softened

1 cup powdered sugar

½ cup sour cream

½ teaspoon lemon juice

¼ teaspoon vanilla extract

Beat butter and powdered sugar with an electric mixer until smooth. Add sour cream, lemon juice, and vanilla; beating until mixture is creamy. Cover and chill until thoroughly cold. Serve over fruit salad. (I use light sour cream.)

NOTE: As to making the syrup mixture, I had to do it twice. The first time it was still too liquid (to my way of thinking) after 5 minutes, so I did it around 10 minutes. Then it was too thick by the time it cooled. So I redid it and just cooked it the 5 minutes stated in the recipe. It was still liquid, but the result was very good. It is a very refreshing salad and we both really liked it. It was in the July 2002 Southern Living under "Summer Suppers."
