Mixed-Pepper Steak with Onions

1-tablespoon soy sauce

1-teaspoon cornstarch

1/3 cup + 2 tablespoons cold water, divided

1 ½ pounds sirloin steak, cut up crosswise into strips

bullet

Salt and pepper to taste (or seasoned salt and garlic powder)

¼ cup olive oil, divided

bullet

4 peppers (yellow, orange, green, red) cut into strips

bullet

1 large onion, halved and cut into strips

bullet

3 garlic cloves, sliced

Cooked rice

 

Stir together soy sauce, cornstarch, and 1/3 cup water in measuring cup.

Pat steak dry and sprinkle with seasonings. Cut into strips.

Heat 3 tablespoons oil in 12" skillet over medium heat until hot. Stir-fry the steak until browned but still pink inside. Remove with a slotted spoon and put into bowl.

Add 1-tablespoon oil to skillet. Add garlic and all peppers and onion and stir-fry about 6-7 minutes, until garlic is golden. Stir in 2 tablespoons water and cook, covered, 3 minutes.

Return steak and juices to skillet, and then stir in cornstarch mixture. Bring to a boil and cook, stirring, 2 minutes.

Serve over your choice of rice.

NOTE: This is in the October 2002 Gourmet Magazine. It was easy, good, and very pretty with all the colors of the peppers. I bought sirloin steak at Publix, seasoned it with season salt and garlic powder and then cut it into the strips. The strips were wide, so I further cut them in half lengthwise. It was incredibly tender!!!!! I also served it over Zataraines yellow rice, as that is our favorite. The recipe says it serves four. We had fresh spinach and a salad with it. If we weren’t on a low-carb diet, we’d have had bread, too!
