Monterey Jack Cheese Quiche

1-tablespoon extra virgin olive oil

1 cup thinly sliced onion

5 eggs

8 ounces shredded Monterey Jack cheese

bullet

8 ounces cottage cheese

bullet

2 tablespoons melted butter

bullet

1-tablespoon caraway seeds

bullet

½ teaspoon coarse salt

bullet

¼ teaspoon pepper

Preheat oven to 400. Lightly coat a 9" quiche or pie pan with Pam and set aside.

Heat a skillet over medium heat for one minute. Add the olive oil and swirl the pan to coat the bottom evenly. Add the onion and sauté for 10 minutes, stirring occasionally.

Whisk the eggs in a bowl until well blended. Add the sautéed onions and the rest of the ingredients and blend well.

Pour the mixture into the prepared dish. Bake for 15 minutes.

Reduce the oven temperature to 350 and bake for 30-35 minutes until the center is set and golden brown on top. Cool at least 10 minutes before serving.

NOTE: Again, from the low carb cookbook. We liked it, as the caraway seeds gave it a distinctive flavor, which we enjoyed. According to the book, there are 3 grams of carbs if you use it as 8 servings.
