Mozzarella Toasts
Preheat oven to 350. Slice baguette on sharp diagonal to make about 20 slices. Melt butter with oil and garlic in small saucepan. Remove from heat. Brush butter mixture over both sides of bread slices. Arrange bread on foil covered baking sheets (two). Sprinkle mozzarella over toasts, sprinkle with garlic salt and paprika. Bake 350 for 13 minutes.
NOTE: Found this in October 1999 Bon Appetit while hunting a bruschetta recipe. It called for using fresh grated parmesan cheese and sprinkle it with salt and pepper. I had mozzarella so I used that instead and sprinkled it with garlic salt and paprika. Michael really liked it. I fixed half the recipe for us and only used five slices of baguette, which was left over from another recipe I had fixed. If anyone has a good bruschetta recipe, I’d love to have it! |
