Mustard Greens
Be sure the greens are thoroughly cleaned. Place a small amount of water in the bottom of a large pot and cook the salt pork for about 10-15 minutes. Add the greens and salt (small amount) and cook them down. At this point, take the green pepper and place it on top of the greens. Continue cooking until they are thoroughly cooked. Before serving, remove and discard the green pepper.
NOTE: This is a wonderful way to fix greens and it has a really good flavor. A friend said she went on the site looking for a way to fix collards and I didn’t have anything. I never fixed collards, as they were too strong to appeal to my family. But we did love greens! Fixed them often with pulled pork, great northern beans, and cornbread. Fruit is always good anytime pork is served, according to my mother, so I’d usually fix a pear and cheese salad to go with it. Just drain a can of pears and put them on some pieces of lettuce. Put mayonnaise on top (a thin layer), then top with grated cheddar cheese. |
