Okra (Fried)

Take the okra and cut off the top. I try and get small ones, but if I get large ones I simply cut them in half. If you get a tough one, just throw it away, as it will NOT be good.

Bring water to boil, add the okra and boil for 5 minutes. Drain well.

Beat egg. Roll okra into bowl with egg and coat thoroughly. Roll in corn meal. Fry in a small amount of Crisco (I use an electric skillet.) until golden on each side. Drain on paper towels and salt to taste.

NOTE: A good friend in Louisville taught me how to do this back in the early ‘70s. My children used to love this, so when I’d do it, I’d fix quite a bit. Once I got it with corn meal on it, I would put it all on a cookie sheet (in layers sometimes) and freeze it. When frozen, I’d put it in a zip lok bag, and then just take out what I wanted to fix when I did fix it.
