Oven Baked Fish in Basil, Garlic, Sun dried Tomato Vinagrette
Mix together with whisk:
| 1/4 cup fresh basil |
| 1/4 cup olive oil |
| 2 Tablespoons lemon juice |
| 1 tablespoon capers |
| 2 teaspoons caper juice |
| 1 tablespoon sundried tomatoes |
| 1 1/2 teaspoons minced garlic |
Pour over fish; bake 400 degrees until done.
NOTE: Recipe is for Halibut. I used to fix with Steelhead Trout or Grouper. I know its good with those three types of fish. I imagine any mild white fish would be appropriate.
