Oven Fried Salmon

 

bullet¼ cup vegetable oil
bullet1 tablespoon lemon juice
bullet1 cloves garlic, minced
bulletSalmon filet
bullet½ cup crushed her-seasoned stuffing
bullet¼ cup grated Parmesan cheese
bullet2 tablespoons chopped fresh parsley

 

Combine oil, lemon juice, and garlic. Place salmon in shallow pan (I used Tupperware so I could turn it) and pour marinade over it. Cover and marinate 30 minutes in refrigerator, turning once.

Remove salmon from marinade, reserving 2 tablespoons. Combine stuffing, cheese, and parsley.

Place salmon on foiled lined 13x9 pan and top with stuffing mixture. Sprinkle with reserved marinade.

Bake at 500 for 15 minutes or until fish flakes easily.

 

NOTE:  I found this one, also, in August 1981 Southern Living and it, too, is excellent! The recipe says to dredge the fish in the stuffing mixture but I found it better if I just put it on the top, so the bottom didn’t get soggy with it.
