Oven-Roasted Grape Tomatoes

bullet1 pint red grape tomatoes
bullet1-tablespoon extra virgin olive oil
bullet¼ teaspoon salt
bullet1/8-teaspoon black pepper

Wash and cut off ends (if desired) of tomatoes. Place in a bowl. Add salt, pepper, and olive oil. Mix gently until coated. Put into flat casserole dish where they are all in one layer. Bake 10-15 minutes (at 400 degrees), until beginning to split.

 

NOTE: I got this from a friend as part of a pasta salad recipe. Since we are doing low carb, I just fixed the tomatoes to see how we’d like them. And we liked them a lot! It’s a quick and easy way to fix a vegetable. I did bake mine 15 minutes.
