Pan fried Steaks with Shallot-Gorgonzola Butter
Using a fork, mix 2 tablespoons butter, cheese, shallots, and chives in small bowl until well blended. Season with salt and pepper. Melt two tablespoons butter in skillet. Season steaks to liking. Add to skillet and cook until desired doneness. Transfer to plates and top with half butter mixture. NOTE: This is half the recipe and fed us well. The butter was fantastic on top of the steaks. Altho the rib eyes were very tender, they were too stringy for Michael and he wants to use sirloin or T-bones next time. It said to refrigerate the butter after mixing it, but I did not, as I prefer room temperature butter on hot things. |
