Pasta with Spicy Shrimp and Sun-Dried Tomatoes

2 tablespoons olive oil, divided

½ pound uncooked large shrimp, peeled and deveined

2 large shallots, sliced

¼ cup + 2 tablespoons drained oil-packed sun-dried tomatoes

¼ cup sliced pitted Kalamatra olives

3 garlic cloves, minced

bullet

½ teaspoon grated lemon peel

bullet

¼ teaspoon dried crushed red pepper

1 (14 ounce) can diced tomatoes in juice, drained

bullet

¼ cup chopped fresh basil

bullet

4 ounces cooked linguine

bullet

½ cup crumbled feta cheese

 

Heat 1-tablespoon oil in 3 qt (or 10") skillet. Add shrimp and saute until pink, about 2 minutes. Transfer to bowl, using slotted spoon.

Add 1-tablespoon oil to same skillet. Add shallots, sun-dried tomatoes, olives, garlic, lemon peel, and crushed red pepper. Saute about 2-3 minutes. Add canned tomatoes and simmer until sauce thickens, about 3 minutes. Stir in basil. Return shrimp and any juices to sauce. Heat 1-2 minutes.

Add cooked pasta to shrimp mixture. Toss over medium heat until sauce coats pasta. Season with salt and pepper. Transfer to bowl and top with feta cheese.

NOTE: I found this in the December 2002 Bon Appetit and we thoroughly enjoyed it. I used my cherry pit tool (its under my favorites) to get the seeds out of the olive, and then I just sliced them in half. I also minced my garlic instead of slicing it. This is exactly half the given recipe and we will get two meals out of it.
