Pasta with Spicy Sun-Dried Tomato Cream Sauce

 

bullet1 tablespoon olive oil
bullet2 large garlic cloves, minced
bullet1/2 cup chopped drained oil-packed sun-dried tomatoes
bullet1/2 cup whipping cream
bullet1/2 cup roasted red peppers, drained, chopped (from jar)
bullet1/4-1/2 teaspoon dried crushed red pepper
bullet1/2 cup fresh basil leaves, chopped
bullet4 ounces penne pasta (about 2 cups)
bullet1/2 cup grated Parmesan cheese

Heat oil in saucepan over medium heat. Add garlic; saute one minute. Add tomatoes, cream, red peppers, and crushed red pepper; simmer over medium heat two minutes. Stir in 1/4 cup basil and simmer one minute longer.

Cook pasta in large pot of boiling salted water until tender, stirring occasionally. Drain, reserving 1/3 cup liquid. Add pasta to tomato mixture. Add remaining basil and parmesan cheese and toss to coat. Add enough reserved cooking liquid to pasta to moisten if dry. Season with salt and pepper.

NOTE: Found this recipe in October 2000 Bon Appetite. This is half the recipe given and fed us easily and enough left over for lunch.
