Peach-Amaretto Sundaes

 

bullet1 pint vanilla ice cream, softened slightly
bullet2 1/2 tablespoons amaretto, divided
bullet1 tablespoon brandy, divided
bullet3 ripe peaches, peeled and sliced
bullet2 tablespoons sugar
bulletseveral crushed amaretto cookies

 

Combine ice cream, 1 1/2 tablespoons amaretto, and 1/2 tablespoon brandy in a large bowl. Stir to blend well. Cover and freeze until firm.

Combine peaches, sugar, remaining 1 tablespoon amaretto and 1/2 tablespoon brandy in another large bowl. Toss to coat. Let peach mixture stand until sugar dissolves, tossing occasionally, about 15 minutes.

Divide sliced peaches among 6 dessert bowls or wine glasses. Spoon vanilla ice cream mixture atop peaches. Sprinkle desserts with crushed amaretti cookies. Serve immediately.

NOTE: Found this in Bon Appetite last August (1999) but just got around to fixing it. We don't drink Brandy so I went to Walgreens and got the smallest bottle I could that the guy said was good. Also, the Amaretti Cookies the book said are Italian macaroons and found in Italian markets and some supermarkets. Neither Publix nor Albertsons had them, tho, so I bought almond shortbread and crushed it. The recipe listed above is half the amount and fed four of us comfortably.
