Mary’s Peach Cobbler

1 large can sliced peaches, drained; reserve juice

1 stick butter

bullet

¾ cup plain flour

bullet

2 teaspoons baking powder

bullet

¾ cup milk

bullet

¾ cup sugar

bullet

1 teaspoon cinnamon

bullet

1 teaspoon vanilla

bullet

1 cup reserved juice from peaches

bullet

¼ teaspoon salt

 

Melt butter in two quart baking pan (I used an oval dish I have that is 10x6x2 ½).

Add drained peaches to butter.

Blend next eight ingredients until smooth and pour over peaches.

Bake 35-45 minutes on 350.

Serve warm with vanilla ice cream!

 

NOTE: This is Michael’s mother’s recipe and he loves it! I thought it was the same as mine (elsewhere on the web site) but this one uses canned peaches and makes use of the juice. It is so hard to find good peaches, that this recipe is a great alternative when you can’t find them! I did sift the flour (because my mother told me to always sift flour!) but the recipe does not indicate that needs to be done. Also, we use Fat Free milk, so that is what I use also when any recipe calls for milk.
