Peachy Pork Picante

 

bullet1 1/2 lbs. Top loin pork chops, cubed
bullet2 tablespoons taco seasoning
bullet1 tablespoon extra-virgin olive oil 1 cup salsa
bullet4 tablespoons peach preserves

 

Toss pork with taco seasoning.

Heat oil in non-stick skillet over moderately high heat and brown pork.

Stir in salsa and preserves; bring to a boil, lower, heat, cover, and simmer 8-10 minutes.

Serves 4.

 

I served this over brown rice. I also used apricot preserves sweetened with neutrasweet rather than peach preserves. It was spice and wonderful!
