Pear Salad with Feta, Bacon, Hazelnuts and Shallot Vinaigrette

1 tablespoon + 1/2 cup olive oil

3/4 cup thinly slices shallots

8 bacon slices

bullet

5 tablespoons sherry wine vinegar

bullet

2 large bunches watercress

bullet

2 heads Belgian endive, trimmed, sliced crosswise

3 ripe pears, thinly slices

3/4 cup crumbled feta cheese

bullet

1/3 cup husked toasted hazelnuts, coarsely chopped

 

Heat 1 tablespoon oil in skillet. Add shallots and saute until tender and golden, about 8 minutes. Transfer to small bowl and cool.

Cook bacon in same skillet until crisp. Transfer to paper towels and drain. Crumble into small pieces. Set aside.

Whisk vinegar and remaining 1/2 cup oil in medium bowl to blend. Stir in shallots. Season generously with salt and pepper.

Combine watercress, endive, and pears in large bowl. Pour dressing over salad and toss to coat. Sprinkle with feta cheese, hazelnuts, and bacon and serve.

NOTE: I got this from Aysha years ago and just realized it wasn't in my word processor! She fixes it with the watercress and endive, but I just buy a bag of salad and am done with it! I also usually fix half the bag and half the recipe for the two of us as a dinner salad. It is one of our favorites, as the flavors are wonderful!!! .
