Peas, Bacon, and Tomatoes

2 slices bacon, chopped

1/2 medium onion, finely chopped

1/2 green bell pepper, chopped

2 garlic cloves, minced

1 bay leaf

bullet

1 1/2 large tomatoes, chopped

bullet

2 cups chicken broth

bullet

2 cups fresh peas

bullet

1 tablespoon fresh minced parsley

bullet

1/2 teaspoon salt

bullet

1/2 teaspoon pepper

bullet

1/2 teaspoon Worcestershire sauce

bullet

1/4 teaspoon Tabasco

 

Cook bacon in Dutch oven until crisp. Stir in onion, bell pepper, garlic, and bay leaf; sauté until vegetables are tender. Stir in tomatoes and cook 3 minutes.

Stir in broth and peas; bring to a boil. Cover, reduce heat, and simmer, stirring occasionally for 50 minutes.

Stir in parsley and remaining ingredients. Cook, stirring often, five minutes. Discard bay leaf.
