Peas in Spicy Tomato Sauce

2 tablespoons olive oil

1 medium onion, chopped

1 teaspoon ground cumin

1/2 teaspoon tumeric

1 (28 ounce) can tomatoes, drained and pureed

salt and freshly ground pepper to taste

1 tablespoon tomato paste

bullet

1/4 cup water and more as needed

2 garlic cloves, minced

bullet

1 pint fresh black eyed peas (or others)

 

Heat oil in large saucepan. Add onion and saute about 6 minutes. Add cumin, turmeric, and pureed tomatoes. Season to taste with salt and pepper. Bring to boil.

Cover and cook over low heat for 10 minutes, stirring occasionally. Add tomato paste, water, garlic, and peas. Cover and cook until peas are tender, tasting and adding water as necessary. Season generously with pepper.

NOTE: The recipe said to cook the peas for 10-20 minutes. I bought fresh black eyes from Publix and the package said to cook 30-35 minutes. However, for whatever reason, it took almost an hour for the peas to be tender. Don’t' know if they were old or not. They were freshly shelled and in the produce section. Frozen peas would require hardly any cooking at all and consequently you'd use less water. I also served these over brown rice and with a salad.
