Pebbles BBQ Chicken Pizza

9" pizza crust |
|
1 ounce each: goat cheese and cream cheese, blended together |
|
2 cups cooked, diced chicken breast |
|
1 1/2 ounces BBQ sauce |
|
1/4 sweet onion, julienned and sauteed over low heat until caramelized |
|
2 ounces Monterey Jack cheese |
|
Pinch or two of All-Purpose seasoning |
|
1 plum tomato diced, for garnish |
Heat oven to 450.
Spread goat cheese mixture over crust (I use Boboli). Arrange chicken on top. Ladle BBQ sauce on top.
Arrange caramelized onions on top of sauce and cover with Monterey Jack cheese.
Add a pinch or two of seasoning.
Bake 10-12 minutes on a pizza stone. Garnish with Tomatoes.
NOTE: I did not use any tomato for garnish, nor did I worry about the 'ounces' called for in the recipe. I put what I wanted! I grilled two large chicken breasts and that made plenty for us.
