Sauté onions, pepper, and garlic in olive oil until vegetables are tender. Add meat and cook until browned. Drain thoroughly. Return to skillet and add all remaining ingredients. Simmer, uncovered, for 30 minutes, stirring occasionally. Serve with black beans and rice. NOTE: I got this recipe from a friend. It is from the Ft. Myers Junior League Cookbook, GULF SHORE DELIGHTS. I fixed it in a 10" calphalon skillet and used one of those screens to cover it while it cooked, as opposed to a lid, since the recipe said to cook uncovered. It has just the most unusual and wonderful flavor and we absolutely loved it! |
