Pickled Beets

1 can sliced beets, drained

2 tablespoons sugar

bullet

4 tablespoons EACH oil and vinegar

Drain beets well and put into container. Add remaining ingredients (I use Crisco and tarragon vinegar, but neither is specified), cover, shake, and refrigerate until cold.

NOTE: Got this recipe from a friend in Eustis years ago. It is also good with sliced onions and hard boiled eggs, but some people don’t like them---so I don’t do it! J If you use one of the tiny cans of beets, just half the proportions given.
