Quiche Lorraine

2 tablespoons butter

½ cup chopped onion

1 cup slices fresh mushrooms

2 eggs

2 egg yolks

bullet

1 ½ cups half and half

bullet

2 tablespoons sour cream

bullet

½ pound bacon, cut up, cooked crisp, and drained

bullet

4 ounces (1 cup) shredded Swiss cheese

1 teaspoon Dijon mustard

bullet

½ teaspoon coarse salt

bullet

¼ teaspoon black pepper

bullet

1/8-teaspoon cayenne pepper

 

Preheat oven to 350. Lightly coat a quiche pan. Set aside.

 

Melt the butter in a 10" skillet over medium heat. Add the onion and sauté for 3 minutes, stirring occasionally. Add the mushrooms and cook for another 3 minutes or until softened. Set aside.

 

Combine the eggs, egg yolks, half and half, and sour cream in a medium bowl and whisk until well blended. Add the cooked onion mixture and the rest of the ingredients and blend well.

 

Pour the mixture into the prepared quiche dish. Bake for 45 minutes, until the center is set and the top is golden. Cook at least 10 minutes before cutting.

 

NOTE: This was in the low carb cookbook and is listed as 12 servings, each with 2 carbs per serving. I serve bigger pieces than that, but it is still a low carb dish.
